This is a riff on my basic chili recipe (I usually use ground turkey). Either venison chop or ground venison is good for this. Last night, I used a combination of diced venison chop and ground beef.
*1 28 oz can crushed or whole tomatoes
*1 package or equivalent of meat (in this case, venison)
*1 bottle of beer, or equivalent amount of red wine. Substitute: a shot of bourbon
*cumin and chili powder, to taste
*1 can kidney beans
*about a cup of chicken broth
*1 chopped green pepper
*1 chopped red pepper
*1/2 chopped red onion
*two cloves garlic, minced
*two chipotle peppers, roughly chopped
*salt and pepper, to taste
Brown meat with onions and garlic. Add meat and remaining ingredients to crock pot. Cook on low for eight hours.
Serve with cornbread, rice or, if you’re from Cinci, spaghetti.
