My friend Becky and I were semi-regulars at a restaurant in the Hamptons called Papa D’s that had a two-for-one pasta night during the week. They made a dish I really loved – it was soooo simple but yummy. I’ve recreated a fairly close version at home in the past, though it’s never quite the same.
*1 package or less of farfalle pasta
*2 breasts of chicken, pounded semi thin and cut into pieces
*a little less than a cup of diced tomatoes
*1 ball of fresh mozzarella – cubed
*3 cloves garlic, minced
*red pepper flakes
*a few leaves of fresh basil
*some olive oil
Cook pasta to al dente. In a pan, sautee garlic. Season chicken with lots of salt and pepper and red pepper flakes. Add to pan and brown completely. Add in tomatoes and heat through.
Cube your mozzarella and tear up basil leaves. In large bowl, combine pasta, chicken mixture, mozzarella and basil – toss and serve.
