If I post every clean-out-the-fridge pasta or stir fry I ever make, my blog will be…well, considerably longer. But I was really pleased with how these flavors melded together.
*2 links duck fennel sausage
*2-3 servings angel hair pasta
*Riesling
*1 can diced tomatoes
*1 cup frozen broccoli
*5 basil leaves, torn
*1 cup or two of spinach leaves
*1/2 a red onion
*a little bit of parmesan cheese
*about 1 oz goat cheese
*olive oil
*a 1/2 cup or so of halved grape tomatoes
*zest of one lemon
Sautee onion in olive oil. Slice sausages into round circles. Cook through, browning on both sides. Deglaze pan with wine. Add basil and grape tomatoes. Cook a couple minutes. Throw in can tomatoes (don’t drain) – bring to a boil and simmer. Stir in goat cheese and lemon zest; add spinach. Microwave frozen broccoli separately and add to the mix. Serve over pasta – grate a little parm over it.

My clean out the fridge pasta of yesterday involved jamon serrano, onions, garlic, tomatoes, frozen peas, basil and ricotta cheese over WW angel hair. Anything is possible.
