I haven’t had the BEST luck with this on the grill – I always seem to take it off a little early and finish it in the oven. But that’s what meat thermometers are for.
*1 can BBQ rub
*1 whole chicken
*2 tbsp Barbecue rub. You can make your own – I usually doctor up some store bought with some extra cumin, smoked paprika and brown sugar
*olive oil
Preheat grill. Open can of beer and pop a few extra holes in the top of the can. Pour out half the can of beer and drink.
Coat your chicken in BBQ rub. Try to get some under the skin as well. Brush with a little olive oil. Add some grill seasoning to the liquid in the beer can
Position the chicken so the can of beer is literally up the butt of the chicken – the legs act as a little tripod of sorts so it remains standing.
Grill the chicken under indirect heat (light one side of the grill but put it on the other) until it reaches at least 165 degrees – take about an hour and a half.
