I found this recipe linked to from a blog I read, and had some good luck with it. I adapted it in the way you see below. Served this with grilled cheese sandwiches on whole wheat.

Rabes and Salamis
Despite the cloying name, I thought this Rachael Ray dish for pasta with salami and broccoli rabe looked good when watching Food Network recently. I thought the results were good but not great, though John seemed to like it a lot. It’s a super easy recipe. I basically halved it last night and there still ended up being a ton of leftovers.

Quick Pesto Cream Sauce With Peas and Turkey Bacon
I wanted a quick sauce to go with the frozen whole wheat ravioli I made last night. This was inspired by my general sentiment that peas, pancetta and cream taste good together, but in a much more makeshift form. NOTE: I used “Fat Free Half and Half” and do not recommend it – it added kind of an off, sweet aftertaste.

Roasted Leg of Lamb
For Easter dinner, I roasted a leg of lamb and served it with a red wine sauce. What I ended up doing was mostly a combo of two Emeril recipes. It turned out well, though more “medium” than “medium rare”.

John and I are making Easter breakfast, which for me must include kielbasa. I’m doing kielbasa and eggs, as well as some bacon, while John does his yummy fried breakfast potatoes. Here’s how he makes them.

Good combo – Peas and Paprika
I made frozen peas with some Hungarian paprika, salt and a touch of melted butter last night – yummy combination, for future reference.

Makeshift Jambalaya
It was another clean-out-the-fridge night, as I’m trying to avoid grocery shopping before payday. I knew I had two leftover chicken thighs , half a package of kielbasa and canned tomatoes (turns out I was wrong about that one). I figured some sort of jambalaya-type thing would do the trick.
