John’s breakfast potatoes

John and I are making Easter breakfast, which for me must include kielbasa. I’m doing kielbasa and eggs, as well as some bacon, while John does his yummy fried breakfast potatoes. Here’s how he makes them.

Potatoes

Onions

Garlic Salt

Olive oil

Paprika

Thinly slice your potatoes, almost to the point of transparent. Slice onions thin as well.

Heat oil to medium heat, cook onions for 1-2 minutes. Add potatoes to pan. Heavily season with garlic salt and paprika.

Continue to stir and cook at low to medium heat until potatoes are cooked through. This is a long, slow cooking method – potatoes will probably take at least a half hour.
