Spaghetti with Anchovies And Breadcrumbs

This was my first foray into cooking with anchovies back on Long Island. Not bad, though it didn’t become a frequent repeat dish, hehe. I’m anxious to try it now and see how my palate has changed.

Homemade breadcrumbs (theirs use Italian bread, olive oil, garlic, parsley and pepper)

1 pound uncooked spaghetti

1 tbsp olive oil

1.5 tsp minced garlic

salt and pepper

crushed red pepper

3 canned anchovy fillets, minced

1/2 cup chicken broth

1/2 cup grated parm

Make breadcrumbs if you haven’t already. Sautee crushed breadcrumbs in olive oil.

Prepare pasta according to directions.

Heat oil in pan. Combine garlic, salt and pepper, anchovies and red pepper in small bowl and mash together. Add to pan and sautee for a minute. Stir in broth, heat through. Add pasta and then cheese, toss together.
