I wanted a main course salad that was a little different. I started thinking along the lines of nicoise, but I don’t trust the tuna over at SFW. I thought pork tenderloin might make a good substitute, so I started building a salad around that.

Pork tenderloin, cooked and sliced (I used this recipe)
mixed greens
sliced orange pepper
mandarin oranges
goat cheese
blanched green beans
blanched asparagus
red potatoes, cooked and cut into chunks
red onion, sliced
Blood orange dressing (recipe below)
Toss lettuce with dressing. Plate. Arrange vegetables and cheese. Chill until serving, as you wait for your pork to cook.
Slice pork and top salad with some. Drizzle with a little extra dressing on top.

Juice from a blood orange
juice from half a lemon
dijon mustard (spoonful)
honey (just a bit)
salt
good olive oil
Whisk ingredients together.
