Made this for dessert on July 4 – my Mom brought with her an Emeril cookbook for inspiration.

Six peaches, pitted and halved
marscapone cheese
honey
Preheat grill. Cook peaches fleshy side down on grill for 3 minutes. Flip – put on grill safe cookie sheet. Drizzle with honey. Cook about five minutes or until soft.
Remove from grill. Scoop marscapone into center of each peach. Drizzle w/ a bit more honey and serve.
