. I may be fudging a bit on the proportions b/c I can’t find the book I got them out of (plus I ended up, like, tripling the recipe), but this will give you a general idea. As a note, I thought it needed more kick.
a few tablespoons simple syrup
zest of one lime
fresh lime juice (1-2 limes)
6 cups watermelon
1/2 cup tequila
1/4 cup triple sec
Puree watermelon in blender. Combine zest and simple syrup (ideally, you’d prepare the latter with the zest, but I had some syrup I’d made earlier in the fridge, so I took a short cut). Combine 1.5 cups watermelon puree with syrup and remaining ingredients. Taste and adjust if necessary. Chill (or, alternately, shake with ice). Makes around two drinks.
