Perhaps I’ll become a baker yet. I got into the habit of buying bananas for John during hockey season, though they’d often turn quickly. I can really only tolerate bananas in smoothies, but figured I’d give banana bread a try – I could always take it into work. The blueberries definitely pushed it over into yum territory for me.

the rest of a package of blueberries
3 ripe bananas, mashed smooth
1 stick butter, softened
1.5 cups flour
0.5 cups wheat flour
1 tsp salt
1.5 tsp baking powder
3/4 cup sugar
2 eggs
handful chopped walnuts
1 tsp Liquor 43 (note: this was a swap b/c we have no vanilla and this liquor has vanilla flavors)
Preheat oven to 350.
Mix together dry ingredients.
Cream butter. Beat in eggs and bananas.
Mix this with dry ingredients. Stir in vanilla, nuts and blueberries.
Pour batter into greased loaf pan. Cook 45-60 minutes until done (mine took 55). Cook for at least 15 minutes.
