Grilled asparagus doesn’t really need much adornment. Buuuut, we had a tomato and jalapeno that were about to turn, so I decided to get a little creative.
1 bunch asparagus
salt and pepper
1 small tomato, diced and salted
1 jalapeno, seeded and minced
Toss together jalapeno and tomato and let sit for awhile (you can add a splash of red wine vinegar if you like. I was going to, but forgot).
Heat grill. Spray asparagus with cooking spray, and season with salt and pepper. Grill until cooked.
Top asparagus w/tomato mixture and serve.
