Whole fish is my favorite! I didn’t expect John to pick it when I asked him to bring home seafood but he did, so yay! This preparation couldn’t be easier.
1 whole fish (make sure you have the guy gut and clean it. I usually leave the head on, but John asked for it beheaded). Ours was a 2 lb rockfish
olive oil
1 lemon, sliced
handful cilantro, chopped
salt
Preheat oven to 400.
Rub fish inside and out with oil; season with salt. Stuff cavity with lemon slices and cilantro.
Cook about 20-25 minutes or until just about cooked through. Turn up to broil to crisp the skin and serve.
