My friend Lindsay pointed out this recipe when I was talking about having leftover orzo hanging around. I ended up bringing it to her birthday party, along with pumpkin hummus. I wasn’t totally in love with the recipe – I think it could benefit from more veggies and roasting the chickpeas. But the dressing’s really good, and it’s still enjoyable. I’m pretty sure the goat cheese amount in the recipe is a misprint, and I adjusted accordingly. Note: This is pretty high in WW Points, in hindsight.
