I’ve been cooking so many other people’s recipes lately – it felt good to just whip something up on my own tonight. This is a simple smothered pork chop recipe, which I jazzed up with mushrooms and shallots. This may be the last thing I cook before Mostly Meatless March, so I’m kinda glad that it’s pork, hehe.
