It’s about time we got our grill going again.
2 hearts romaine lettuce
about 1/3 baguette, cut into flat, thin pieces
1 breast chicken
about 1/4 cup shredded parmesan
olive oil and cooking spray
dried herbs (I used Mural of Flavor for the chicken and Pasta Sprinkle for the bread)
salt and pepper
Caesar Dressing (recipe to follow)
Preheat grill and spray grates with cooking spray.
Cut chicken into tenders – season with salt and pepper and seasoning of choice. Spray with cooking spray and set aside.
Brush your bread with olive oil and spray with cooking spray and top with herbs; repeat on the other side of the bread.
Grill chicken until cooked to desired temperature. Remove chicken from grill. Add bread and grill on one side. Flip, and put the leaves of 1 head of romaine on grill, charring slightly. Remove bread and leaves from grill.
Chop grilled romaine, and chop non-grilled romaine. Chop chicken and bread as well. Toss together, and top with cheese and dressing (below).
Caesar dressing
olive oil and white vinegar (about a 2:3 ratio)
2 cloves garlic, chopped
a few squirts worcestershire sauce, or five chopped anchovies
4 tsp parmesan, grated
salt and pepper
Combine ingredients, whisk together.
