Easy use of leftovers for lunches.
2-3 cups cooked quinoa
about 1/4 cup dried sour cherries, chopped
about 20 pistachios, chopped
juice from 3/4 lemon
salt and pepper to taste
Combine ingredients; check seasoning. Serve cold or at room temp.

Ha! I find it funny that we both posted leftover quinoa recipes today! I’m glad I’m not alone trying to use up grain leftovers!
