Masala Wraps

This is sort of a semi-homemade recipe a la Skelator, I mean Sandra Lee, but it was so tasty it’s worth noting if you can find these burgers.

I bought frozen vegetable masala burgers from the Indian grocery store (Tandoor Chef brand). They’re so good and only 3 points each! I got the idea to cut them up and combine them with veggies and a little sauce in a tortilla for an Indian wrap. So good! I cut down 8 inch flour tortillas to 6 inch to save on calories, but once I added up the difference (and overstuffed the tortillas), I decided this won’t be necessary next time.

2 whole wheat tortillas, 8 inch

1 vegetable masala burger (note, if you can’t find Tandoor Chef, Trader Joe’s makes a brand, I just can’t vouch for it)

a little bit of frozen corn, defrosted

a little bit of edamame, defrosted

handful cilantro, chopped

chopped lettuce and tomato

quick raita (recipe blow)

Cook burgers according to directions. Cut into pieces.

Microwave tortillas to become pliable. Spread the center with a spoonful of raita. In center of tortilla, combine a pinch of edamame, pinch of corn, pinch of lettuce and tomato, and half your burger mixture. Repeat with another tortilla. Wrap as if you’re wrapping a burrito and serve.

Quick Raita (this was very makeshift)

about 1/2 mini container of Greek yogurt, plain

chopped cucumber

salt

curry powder

Stir all ingredients together.
