I think it’s fun to serve customizable dishes when having people over. This one was semi-inspired by a scene from “Julie and Julia”, where everyone’s ordering their own version of Cobb salad.
3 chicken thighs, seasoned the way you like (I used Penzey’s Bicentennial Rub and some salt and garlic powder)
1 avocado, sliced
handful bleu cheese, chopped up
2 hardboiled eggs, chopped
3 slices bacon, cooked crisp and crumbled
lettuce (I used a head of romaine and half a head of green leaf)
1/2 tin cherry tomatoes, halved and salted
1 cucumber, chopped
Red wine vinaigrette (recipe to follow)
Grill chicken and slice into pieces. While you’re grilling chicken, make dressing and prepare other ingredients. Serve cukes, tomato and salad in a big bowl, and put each other ingredient on the side so people can make their own Cobb.
For dressing
olive oil and red wine vinegar (3:1 ratio or so)
1 garlic clove, minced
about 1 tsp dijon mustard
salt and pepper
Combine ingredients, shake together and serve.
