Roasted turkey breast, where have you been all my life?
I’ve never had much interest in roasting a turkey breast, mostly because I consider myself more of a dark meat person. But I was trying to think of something to make with mashed potatoes (comfort food for John post-wisdom teeth removal), and knew I had a half turkey breast in the fridge left over from stir fry. I really was blown away with how juicy and easy it was to do, and think it’d be a great option for weekday sandwiches, etc.
This was an improvised recipe, pictured here with curry-roasted zucchini and mashed potatoes.
