A fun breakfast from the homemade cookbook that Eve made me. Mine are shaped a bit oddly because I’m not great at pancakes, hehe.
3 eggs, separated
3/4 cup ricotta (I used part skim)
1/4 cup sugar (you could probably get away with less, I think)
3/4 tsp salt
1 tbsp and change vanilla
2 1/4 cup milk
1 1/4 cup flour
1 1/4 tsp baking powder
blueberries (about 10-12 per pancake)
Combine egg yolks and riccota with whisk – make sure cheese is broken up but not blended. Whisk in sugar, salt, vanilla and then milk.
Combine baking powder and flour in another bowl. Fold into ricotta mixture.
Whip egg whites on high until stiff peaks. Fold into batter.
Heat griddle or cast iron skillet (I use cooking spray and butter). Use about 1/4 cup batter per pancake. Drop 10-12 blueberries onto pancake after putting batter in pan.
Cook about 2 minutes per side. As when making pancakes, the first couple may turn out a little off.
