I tried out a new peanut sauce recipe for my cookout and marinated some chicken thighs in it. A nice, subtle recipe.
about 12 boneless chicken thighs
8 tbsp crunchy peanut butter (or substitute half creamy if you’re running low)
1/2 small onion, grated
1 1/4 cups coconut milk
2 tsp soft light brown sugar
1/2 tsp chili powder
1 tbsp dark soy sauce
Put all ingredients except chicken in a sauce pan. Bring to a boil. Let cool.
Marinate chicken thighs in peanut sauce (I had enough marinade left over to serve as a dipping sauce for spring rolls).
Preheat grill. Cook until desired internal temperature, turning at least once.
