John makes ice cream all the time, and he walked me through my first attempt. I had to make some to check off The Perfect Scoop from my cookbook list.
2 cups half and half
1/4 cup Dutch process cocoa
1/2 cup sugar
pinch salt
1/2 cup natural peanut butter
Whisk together half and half, cocoa, sugar and salt. Add to sauce pan. Heat, stirring frequently, until boiling (watch carefully as it’ll foam up). Remove from heat, stir in peanut butter and chill (I did this overnight).
Pour mixture into ice cream maker. Process until desired consistency (20-30 minutes). Freeze for additional firmness and serve later.
