Pork and Vermicelli

I was intrigued by this Cooking Light recipe, mostly on account of its Vietnamese influence. Didn’t love the red pepper in here, and I see this as a building block for a more refined recipe, but it’s still enjoyable as-is.

Melon Prosciutto Salad

We had Mike, Paige and Mike P. over for Easter brunch last Sunday. Leaving behind we’re not religious, and our apartment was in various states of packing pre-move, with boxes everywhere…it was a great idea!
I made lots of yummy stuff, from kielbasa to bellinis. I’ll share a few of the results.

Pork Tenderloin Salad with Blood Orange Dressing

I wanted a main course salad that was a little different. I started thinking along the lines of nicoise, but I don’t trust the tuna over at SFW. I thought pork tenderloin might make a good substitute, so I started building a salad around that.

Mixed greens with pomegranate dressing

Finally emerged from my pneumonia coma (yeah, I have pneumonia; good times) to do some cooking last night. Pot together a main dish based on a favorite appetizer recipe, whipped up some oven fries, steamed some green beans with tarragon. But the surprise highlight of the meal was actually the salad.

Jess’s Winter Salad

Jess made this salad with tortilla soup for lunch on Sunday. It was terrific! The dressing is particularly light and fragrant. She omitted the grapefruits b/c of personal preference – I’ll probably do so with the celery, of which I’m not a fan.

Avocado Salad

I had this with my portabello sandwich for dinner. Avocado just makes everything better. It’s kinda like bacon.
