This is really the ultimate meal for entertaining conveniently and cheaply (or the quickest way to treat yourself on a weeknight). Mussels are so affordable, and so easy to make! This whole meal is like 15 minutes start to finish.
1 large bag of mussels, live
1/2 cup white wine
1/2 red onion, chopped
2-3 garlic cloves, minced
handful of parsley, chopped
Heat olive oil in a large pot. Soften onions and garlic. Add some salt
Add mussels, white wine and parsley to pot. Turn up heat and steam for 8-10 minutes, until open.
Serve with crusty bread and a simple salad – mine was spinach, lemon juice, salt and shaved parmesan.
