Jazzed Up Frozen Veggies

I made Asian lettuce wraps for dinner last night and was looking for a quick, easy side that was relatively healthy. Most of the veggies in the fridge weren’t what I was looking for, so I decided to try to jazz up the freezer-based veggies a little bit – it was surprisingly successful.

About half a bag of frozen broccoli/cauliflower mixture

a cup or two of frozen peas

some crushed peanuts (I used salt and vinegar flavored ones, which added a nice bite)

sesame oil

red pepper flakes

neutral oil such as canola

Submerge frozen veggies in water to allow them to defrost. Drain and squeeze out additional moisture with some paper towels.

Heat canola oil in pan. Add veggies and begin to stir fry. Mix in some sesame oil and red pepper flakes and continue to heat through.

Remove from heat – garnish with crushed peanuts.
