Flatbread Mini Pizzas

These are super easy and slightly more healthy than your normal pizza.

3 half flat breads

tomato sauce (I made a quick one with oregano, basil, garlic, olive oil and canned tomatoes)

mozzarella or Italian cheese blend, shredded

salami (I used some sort of fancy Trader Joe’s artisan type)

Preheat oven to 400.

Line up flatbreads on cookie sheet and crisp about 1 minute on each side.

Remove from oven. Brush flatbread with tomato sauce. Layer on mozarella and salami.

Heat until crust is crisp and cheese is bubbly – start checking after five minutes.
