Finally emerged from my pneumonia coma (yeah, I have pneumonia; good times) to do some cooking last night. Pot together a main dish based on a favorite appetizer recipe, whipped up some oven fries, steamed some green beans with tarragon. But the surprise highlight of the meal was actually the salad.
carrot, sliced on the bias
cubed artisan salami
goat cheese, crumbled
Toss salad ingredients together, and chill in fridge until serving. Before serving, toss with dressing by hand.
olive oil (a decent amount)
real grenadine (made with pomegranate) – a few hits
juice of half a lemon
roasted garlic rice vinegar – a few dashes
dijon mustard – two spoonfuls
Whisk ingredients together and adjust as needed.
