Mostly Meatless March/Protein Salad

I’m so excited for Mostly Meatless March that I’m starting a day early (mostly because I went grocery shopping at TJ’s last night and got a bunch of veg-friendly stuff there). The ground rules for me:

*vegetarian for breakfast and lunch

*fish is ok for dinner, but I won’t be having it every night

*I may make an occasional meat exception for a work event.

So we’ll see how it goes! I started today off with a Mango and Berry Smoothie with Almond Milk (recipe to follow) and had this protein-packed salad for lunch.

Smothered Pork Chops with Mushrooms and Shallots

I’ve been cooking so many other people’s recipes lately – it felt good to just whip something up on my own tonight. This is a simple smothered pork chop recipe, which I jazzed up with mushrooms and shallots. This may be the last thing I cook before Mostly Meatless March, so I’m kinda glad that it’s pork, hehe.

Crispy Cornish Hens w/ Lemon Wine Sauce

Mmm, cornish hens. I had a little trouble with this recipe (basically I had to re-crisp them) but they ultimately tasted great. The hens technique was from The Blue Ribbon Cookbook. The sauce is optional (I made it up). Served over cherry nut couscous (recipe to follow).

Stir Fry Salad

Mark Bittman had a good article in Cooking Light a few months ago about making stir fry salads (basically using greens in stir fry to make warm, salad-like concoctions). This is my first attempt to do this, since I had a bag of spring mix hanging around in the fridge that was about to get gross. It was so good! Served this with Costa Rican-style rice (rice mixed with cilantro, tomatoes, lemon juice, salt and pepper) on the side.

Kitchen Goal #2: Rabbit

Tonight’s dinner was rabbit! Sure, we ate at like 9:40, but I was very happy to cross off another Kitchen Resolution. This recipe, a Cooking Light one (and not as light as one might think; the rabbit alone was like 11 points), was really good; the tarragon shines through and the flavors all meld together well. How was the rabbit? The meat’s a little inconsistent (some pieces are more tough than others) but we both really liked it.
