Potato Salad with Pesto and Green Beans

My friend Becky has made this dish for me before, so I decided to try my own hand at it for Pork Party 2011 (pork recipe coming soon!). It’s super easy, particularly if you make the pesto ahead of time. Roasting the potatoes really bumps up the flavor here, though I bet you could boil them in the pinch.

1 package green beans, trimmed

2 cartons new potatoes (I like using the tri-color ones for effect), quartered

2-3 tablespoons pesto, homemade preferred

salt and pepper

generous handful pine nuts

olive oil

Preheat oven to 400. Roast potatoes until tender (toss with oil, salt and pepper before roasting on a baking sheet).

While potatoes are roasting, blanch green beans (boil until just tender and then plunge into ice water). Drain and set aside.

Combine potatoes, green beans, pesto and pine nuts. Taste, and season with salt and pepper as desired.

Serve warm, cold or room temperature.
