Recipe Variation: Vegetarian Lettuce Wraps

Do lettuce wraps have to contain meat? Not necessarily. I made a variation on my standard recipe with some new ingredients and some Quorn veggie crumbles. Pretty good! And very low cal. Pictured with Vietnamese veggie stir fry (recipe to follow).

2 servings vegetarian crumbles (1 1/3 cup or so)

8 oz or so chopped mushrooms

1/2 an onion, chopped

2 cloves garlic, minced

half a green pepper, chopped

handful mint, chopped

handful cilantro, chopped

handful basil, chopped

soy sauce to taste

oyster sauce (about 1 tsp or more)

sesame oil (about 1 tsp)

about 1 tsp olive oil plus cooking spray

five spice powder, to taste

splash veggie or chicken broth, if you need it

lettuce leaves (about 6, cut in two pieces)

salt, to taste

Heat olive oil and cooking spray in pan. Sautee onion and garlic until soft. Brown mushrooms. Add a little sauce Throw in veggie crumbles and peppers and cook 5-10 minutes, until softened and cooked through.

Add soy sauce, oyster sauce, sesame oil and five spice. Sautee and taste. Add broth if it’s a little dry. Adjust seasoning as needed. Stir in mint, cilantro and basil. Divide into four.

For each serving, spoon 1/4 mixture onto 3 lettuce leaves halves. Serves 4.
