Marinated, Broiled Pork Chops

Another recipe from the Pig Cookbook. I decided to make Wilbur pork chops for Mandy and Mike because Mike is a huge pork chops fan. These were a very simple preparation, and tasted great even though I marinated them for half the recommended time because of a time crunch.

4 bone-in pork chops, at least 1 inch thick

2 tbsp lemon juice

2 tbsp soy sauce

1 tbsp peanut oil

2 tsp fresh ginger, grated

salt and pepper

1 garlic clove, crushed

1 tsp minced sage (I may have forgotten this ingredient)

Combine in a bowl all ingredients except chops. Pour liquid into plastic bag with chops and marinate for one hour.

Preheat broiler. Cook chops about 8 minutes per side or to desired temperature. Serve hot (we had this with couscous tossed with dried cherries, nuts, scallions and lemon juice, as well as some leftover salad with beets and goat cheese).
