Pesto Baked Chicken Drumsticks

Drumsticks are cheap even when you’re using schmantzy organic yuppie chicken meat. These made for such an easy dinner.

6 chicken drumsticks

1.5 tbsp pesto

a splash or two champagne vinegar


Preheat oven to 400.

In a plastic bag, combine pesto, vinegar and chicken. Smush around so they get coated. Allow to marinate for 30 minutes or as much as you have time for.

Remove chicken and put in pan. Season with salt. Cook about 40-45 minutes or until desired internal temperature. If skin isn’t crisping, turn oven up to broil and finish chicken.
