Makeshift Mexican Rice

Another example of just using stuff up.

A couple cups cooked brown rice

1 small onion, chopped

2 cloves garlic, chopped

about 1 cup tomato puree

turmeric

cumin

1 small hot pepper, chopped

about 4 slices ham lunchmeat

a little olive oil

salt and pepper

splash veggie broth

Heat oil in pan. Sautee onion, garlic and pepper. Add ham and brown. Add rice, season with turmeric and cumin. Add splash veggie broth. Stir in puree, heat through, and let some of the sauce cook away. Taste, adjust seasoning and serve.
