Scrambled Egg w/ Tomato and Feta

Rochelle gets credit for this combo (her version is more luxurious though; mine is clearly “Back on Weight Watchers” influenced). The approach is simple. Spray pan with cookng spray. Sautee a little summer tomato. Dump a whisked egg into pan and start scrambling. Add salt and pepper. As egg starts to set, sprinkle in about 1/4 oz feta and a basil leaf (torn). Enjoy!
