Summer Succotash

Quick and easy veggie side.

2 ears corn

1/2 a summer squash, diced

1 small tomato, chopped

about 1/2 cup edamame, thawed

squeeze of lemon juice

cooking spray

salt and pepper

Heat up cast iron. Blacken corn on all sides. Cut off cob.

Spray pan with cooking spray. Sautee zucchini (season with salt and pepper). Add corn to pan and sautee a little more. Add tomato and edamame and heat through. Squeeze lime juice on and serve.

    My mom makes something similar, but adds hot sauce or hot peppers to it. The heat is a little surprising and really adds to the dish. She made it once without the spice and it was disappointing.
