We had BLTs for dinner last night. I made two veggie sides to go with the sandwiches – sauteed wild mushrooms, and this zucchini, spiced up with a little salsa verde.
1 zucchini, chopped
spoonful or two salsa verde
salt and pepper
Heat pan, spray with cooking spray. Season zucchini with salt and pepper; sautee until almost cooked through. Add salsa verde and heat through. Serve.
