Yay for mystery vegetable in the CSA! It was romanesco cauliflower, which some nickname “alien” cauliflower. This batch looked a bit more like broccoli. Some pieces were tough in places but I liked this simple preparation, courtesy of advice from my friend Margeau.
1 head romanesco cauliflower, chopped and stems peeled where rough
1 tsp olive oil
red pepper flakes
juice from half a lemon
2 garlic cloves, chopped
salt and pepper
Preheat oven to 400.
Toss cauliflower with oil, salt, pepper and red pepper flakes. Roast 15 minutes. Remove from oven, toss around, and return to oven for another 5 minutes or so. Squeeze lemon juice on cauliflower and serve.
