Winter Greens Salad

This is one of those salads that’s tasty mostly because it has a lot of unhealthy things in it. The pomegranate is optional because A) pomegranates are a pain and B) the sour dressing balances the rest of the salad already. This was a side dish for stuffed cabbage.

1/2 package mixed winter greens (mustard, collard, etc.)

handful bleu cheese

handful grated gruyere

handful dried cranberries

handful dried apricots

half a pomegranate (seeds only)

mustard dressing (my standard vinaigrette of olive oil, mustard, champagne vinegar, lemon, garlic, salt and pepper)

Toss salad with dressing and serve.
