I love the flavor combo of the ingredients here (there’s actually an appetizer at a Spanish bar I like that just puts a tiny piece of each on a toothpick, coating the quince paste with pistachio. Awesome).
1 baguette, sliced thin
manchego, shaved thin
hard chorizo, shaved thin
Slice baguette; spray pieces with cooking spray. Grill briefly on each side.
Spread toasts with quince paste. Top with cheese, then meat.
