Turkey Soup with Spinach, Orzo and White Beans

This was a I’m-not-feeling-well-and-want-something-comforting-that-doesn’t-involve-going-to-the-store-or-anything-spicy-because-my-tummy-hurts creation.

The orzo here is optional; I cooked it separately for storage reasons and may actually like the soup better without it.

2 quarts chicken or turkey stock, preferably homemade

2 stalks celery, chopped

2 stalks carrot, chopped

like 1/3 package frozen spinach, thawed

about 1.5 cups cooked turkey meat

1 can white beans, drained

1/4 package orzo, cooked (optional)

a bit of chopped cilantro

1 onion, chopped

1 garlic clove, chopped

1 tbsp or so olive oil

Heat oil in pan. Sautee onion, garlic, carrot and celery briefly. Add chicken broth, spinach, turkey meat and beans and heat through and simmer for a bit.

Add cooked orzo, if desired, and heat through. Garnish with cilantro.
