Double Soy Soup

This was made with the remaining edamame salad mixture, and is from my Weight Watchers Now and Later cookbook.

4 cups turkey or veggie stock

2 scallions, sliced (optional)

handful mixed mushrooms, sliced (I used cremini, enoki and shitake)

cooking spray

salt and pepper

1.5 cups cubed tofu

1/4 cup cilantro

Spray pan and sautee mushrooms. Add stock and bring to boil. Reduce to simmer, add remaining ingredients, heat through and serve.
