Cold Sesame Noodles with Tofu

Great lunch for using up leftovers – we had leftover tofu and leftover spaghetti, and this brought them together nicely. From How To Cook Everything Vegetarian.

Cold Sesame Noodles

2 Persian mini cucumbers, halved and sliced

2 cups leftover noodles

1 tbsp sesame oil

1/4 cup peanut butter

1 tbsp sugar

1.5 tbsp soy sauce

1/2 tsp ginger

1/2 tbsp rice vinegar

salt and pepper

a bit of sriracha

chopped scallions, for garnish

fried tofu to add, if you like

Whisk together ingredients sesame oil through sriracha – add warm water until consistency is similar to heavy cream. Toss with noodles – garnish with scallions and cucumber (and tofu, if you like).
