Smashed Potatoes and Edamame With Miso

Kind of an oddball recipe but interesting flavors here.

2 potatoes, peeled and cubed

2 cups edamame, thawed

2 tbsp miso, mixed with 1/4 cup warm water

salt and pepper

chopped scallion

Cook potatoes in boiling water for 20 minutes or so, until tender. Drain, reserving some liquid.

Chop edamame in food processor.

Mash potatoes with edamame and miso. If too dry, add some cooking liquid. Season with salt and pepper; garnish with scallions.
