Awesome and pretty healthy! From one of my Thai cookbooks. Pictured with pesto asparagus (recipe to follow).
1 tbsp butter
1 clove garlic, chopped
3/4 cooked crab meat (I used backfin)
2.5 cups cooked white rice
1 tbsp tamari (dark soy sauce)
3 tbsp fish sauce, divided
1 tbsp sugar
1/2 a red pepper, chopped
1/2 green pepper, chopped
1/2 onion, chopped (or 1 scallion)
1 tomato, sliced
1/2 cucumber, sliced
2 tbsp lemon juice
2 Thai chilis, chopped
Heat butter in pan. Stir fry garlic, onion and crab.
Add egg and scramble until cooked.
Add rice, tamari, 1 tbsp fish sauce and sugar. Stir fry unti heated through. Add peppers and some cilantro and cook another minute or so.
Garnish with tomato, more cilantro and cucumber. Serve with dipping sauce (chilis plus lemon juice and remaining fish sauce)
