John’s Spinach Side Salad with Mustard Dressing

Paired well with our veggie sandwiches.

Spinach

Arugula

1/4 cup dried cranberries

1/4 cup slivered almonds

a bit of leftover hard goat cheese (something fancy we had from a party), cubed

Dressing (see below)

Toss ingredients with dressing.

Mustard Dressing

1 part lemon, 2 parts mustard, 1-2 parts oil, salt, pepper, pinch of sugar (1/4 – 1/2 teaspoon), 1/4 – 1/2 garlic clove

Mix all but oil, add oil to desired consistency. Garlic was added at the end of this recipe, for deliciousness.
