Green Monster Smoothie

I’ve been curious about these trendy green smoothies that rely more on veggies than fruit, so it was fun to make one when trying something out in one of my cookbooks. That said, this smoothie could stand to be sweeter – maybe a bit of honey?

4 oz pineapple juice

2 oz watercress or spinach

4 oz seeded, peeled cucumber

handful mint

handful parsley

1 tbsp lime juice

a few cubes of ice

Combine ingredients in a blender and serve.
