I thought I’d start a little series here called “Clean Out The Fridge Cooking”, since it’s so often how I approach dinner (when I’m not making my way through 75 cookbooks, that is). This was an easy way to liven up leftover Peruvian chicken and make it a bit healthier the second time around.
1/2 breast Peruvian chicken, skin on
1/2 tiny container Peruvian “green sauce”
3/4 head romaine, chopped
Combine vinegar, oil (maybe 1 tbsp vinegar and 1/2 tbsp oil) and green sauce, whisk together and dress lettuce with your dressing.
Slice chicken and arrange over lettuce leaves.
