Curry adds a nice punch to this spinach salad dressing, from the cookbook “Everything Tastes Better With Bacon”.
1/3 cup olive oil
1/4 cup vinegar (I used sherry)
1.5 tsp soy sauce
1 tsp sugar
1/2 tsp dry mustard
1/2 tsp curry powder
salt and pepper
4 slices bacon, cut into 1/2 inch pieces
2 bunches baby spinach
2 hard boiled eggs, chopped
about 2 oz bleu cheese, crumbled (optional)
Combine ingredients olive oil through salt and pepper and whisk together. Set aside.
Crisp bacon in pan. Drain.
Serve salad family style, so people can dress as they like.
