Clean Out The Fridge Cooking: Asian Chicken Salad

Pretty much the only thing new and exciting in our fridge Sunday was lettuce (and radishes, I guess). So it was time to collect odds and ends for a clean out the fridge salad. Since some ingredients I had on hand were vaguely Asian, I tried to make those flavors come through in this recipe.

4 spicy grilled chicken thighs, sliced (I just did mine in the cast iron pan)

4 servings lettuce

handful Napa cabbage, shredded

generous handful lamb quarters (I tried these from the farmer’s market. Basically just delicate greens. optional).

1 carrot, cut into matchsticks

4 radishes, sliced

handful peanuts

4 baby bok choys, cooked with a little soy sauce (optional)

half a bunch asparagus

handful snap peas, trimmed

red pepper flakes

a bit of sesame oil

salt and pepper

a bit of chopped scallion


sesame oil, rice vinegar, lime juice, red pepper flakes and fish sauce, mixed to your desired consistency (I probably had about 2 parts oil to 1 part lime juice, 1 splash vinegar and a few drops fish sauce)

In a pan, sautee asparagus and snow peas in a bit of sesame oil, salt and red pepper flakes. Allow to cool.

Whisk together dressing ingredients. Grill chicken and slice.

Toss ingredients with dressing and serve.
